Sultanas, also known as golden raisins or sultana raisins, are dried white grapes, but of the seedless variety. They are golden in color and tend to be much plumper, sweeter, and altogether juicier than other raisins. They can absorb other flavors, but not as well as regular raisins

Natural sun-dried Thompson seedless raisin is famous for the sweet taste and its distinctive raisin flavor.This type of raisin is naturally dried under the sun without the dipping process that makes caramelizing of the fruit’s sugars contributes towards producing the different taste in raisin. The color of it is mostly dark brown. Raisin’s sweetness is 100% natural with no added sugar.

After collecting the grapes from vineyards, grape clusters are conveniently threaded together in 2-3 meter lengths and in order to reduce drying time, they are immersed in a solution of potassium carbonate, Australian oil and water.  The threaded bunches of grapes are then hung from the  ceiling of shaded cellars away from the sunlight. They are then fully covered and passively smoked with SO2 for about 7-8 hours.  The covers are then removed and the grapes are left to gradually dry for about 2-3 weeks.
